Baked Sunday Mornings: Coffee Ice Cream
good morning everyone! hope you’re all weathering the storm ok.
i was really excited when i saw coffee ice cream was the pick for this week’s baked group. um…if you haven’t noticed by now, i kinda like coffee. like a lot. plus, it was a nice change from all the baked recipes we’ve been doing lately.
there’s nothing quite like homemade ice cream. to be honest though, it’s kind of a pain in the neck to make. with most of the good recipes there’s a million steps involved, making it a long and tedious process. although, you do tend to forget all about it once you’re eating it fresh from the machine. since last summer, i’ve been experimenting with tons of different recipes while testing out my new ice cream maker. i had quite a few hits (more misses) along the way, but the one thing that stands still…the more eggs, the better. it makes the creamiest ice cream ever.
this baked recipe wasn’t so bad at all. thankfully, it was one of the easier ones. it calls for 6 egg yolks so i knew right off the bat it was going to be delicious. there’s also sugar, salt, heavy cream, whole milk, instant espresso powder and a tablespoon of kahula in there. another secret to really good ice cream is adding a small amount of alcohol. you don’t really taste it in there, but it makes the texture really soft and creamy.
my husband and i really really enjoyed this ice cream. i think it may be the best i ever made. tonight, i’m going to put a big scoop of it in my coffee for dessert. can’t wait!
