Baked Sunday Mornings: Tomato Soup Cupcakes with Mascarpone Frosting


i already know what you’re thinking.
tomato soup cupcakes? seriously?
oh, yes. not kidding.
they’re not as scary as they sound. in fact, they taste just like a really delicious and moist spice cake with mascarpone frosting (i used regular old cream cheese). the tomato soup just adds a nice sweetness that you can’t tell is coming from tomato soup. it’s bizarre, but true!

i love this kind of baked good; when you get to shock people after telling them what they just ate. i made everyone try to guess the secret ingredient, haha. i had a lot of fun with these cupcakes :) they were a hit, that’s for sure!
